Chef Dave Finds his Rhythm & "Blues"

Chef Dave was back at it again with Legends Outdoors recently on scenic Lake Wallenpaupack in Mid-February.  On a solo mission he made the trek from the shore to the far off fishing spot with his guide leading the way.  With the recent heavy NE Pennsylvania snows that fell, it was deep snow, areas of slush, and hard spots on the frozen waterway.  Chef Dave had his sights for this day set on big bluegills that swim in these waters and deep snow, slush or temperatures in the 20's would deter his mission.  The holes were drilled, tip-ups set out, and jig rods ready for the day.  It didn't take long before Dave would start coaxing some big bluegills into biting his offering with a very specific technique.  The action would be solid and steady for Dave as he continued to focus on the jigging.  A few flags did go off here and there during the outing producing a few really nice perch that took the offering.  Also on one of the flags Dave would catch his first ever northern pike out of Lake Wallenpaupack the posed for a quick photo  before being released into the lake.  As with almost every trip, Dave prepped and brought some amazing dishes to eat. See photos below and the menu was:
Breakfast:  Venison sausage with a bacon & mushroom gravy over top of broken up toast.
Lunch:  Venison sliders topped with a homemade jalapeno & pineapple peached bourbon barbeque sauce with a side of homemade coleslaw.  Smoked sharp cooper cheese on top on mini buns.
Dave kept at it during the day and would have some rod buckling bluegills that put up quite a battle on the light line and limber rod that he was using.  Dave was all smiles as he would amass over 50 fish on the day and kept 30 of them for filleting.  Six or seven of the bluegills eclipsed the 10" mark and some weighed in at a tad over a pound!  What a day it was for chef Dave and one he will remember for years to come.  We would like to thank Dave for bringing all those tasty dishes, soups and sauces he preps for the guides and also for his continued patronage to Legends Outdoors.  We look forward to seeing Dave in March when he is scheduled back for some more outdoor adventures with us at Legends Outdoors.
